1931 Coconut Patties
This is a classic coconut patty recipe from 1931. It creates a sweet, chewy candy by boiling a sugar mixture to the soft ball stage, then cooling it before adding shredded coconut, chopped nuts, cocoa, butter and vanilla. The mixture is beaten until it thickens slightly, then spooned into patties to set. The recipe yields approximately two dozen pieces.
Ingredients
- 3 cups sugar
- 1/4 cup sweetened condensed milk
- 1/2 cup water
- 2 cups coconut
- 1 1/2 teaspoons vanilla
- 3 tablespoons cocoa
- 1/2 cup chopped nuts
- 1 tablespoon butter
Method
- Mix the sugar and cocoa together in a pan.
- Pour in the condensed milk and water.
- Bring the mixture to a boil until it reaches the soft ball stage, which is between 234 and 238 degrees.
- Allow the syrup to cool down completely to room temperature.
- Stir in the shredded coconut and your choice of chopped nuts.
- Incorporate the butter and vanilla flavouring.
- Beat the candy mixture thoroughly until it starts to thicken in consistency.
- Use a tablespoon to drop portions of the mixture onto sheets of waxed paper.
