This is a wonderfully fast and flavourful one dish meal, ideal for a busy evening. Tiger prawns and sliced pak choi are stir-fried and combined with a tangy sauce made from lime, fish sauce, soy, and sweet chilli. It all comes together in a single wok in about 15 minutes, creating a vibrant and satisfying dish that pairs perfectly with fresh white rice.

15 Minute Tiger Prawns With Chinese Greens

Ingredients

  • 380 g tiger shrimp
  • 350 g Baby Spinach
  • 450 g pak choi, roughly sliced
  • 1 tablespoon Thai fish sauce
  • 1 tablespoon dark soy sauce
  • 3 tablespoons sweet chili sauce
  • 1 tablespoon sunflower oil or 1 tablespoon vegetable oil
  • 1 teaspoon cornflour
  • 2 tablespoons water
  • 1/2 lime, juice and zest of, finely zested

Method

  1. Combine the lime zest and juice with the fish sauce, dark soy sauce, sweet chilli sauce, water, and cornflour in a bowl. Set this mixture aside.
  2. Warm the oil in a wok or a large frying pan. Stir fry the roughly sliced pak choi for 2 minutes, then remove it from the pan. In the same pan, stir fry the tiger shrimp until they turn pink and are cooked through.
  3. Return the cooked pak choi to the wok with the prawns. Pour in the prepared sauce and cook everything together until it reaches a simmer. Stir thoroughly to coat and serve immediately with fresh white rice.
