15 Minute Tiger Prawns With Chinese Greens
This is a wonderfully fast and flavourful one dish meal, ideal for a busy evening. Tiger prawns and sliced pak choi are stir-fried and combined with a tangy sauce made from lime, fish sauce, soy, and sweet chilli. It all comes together in a single wok in about 15 minutes, creating a vibrant and satisfying dish that pairs perfectly with fresh white rice.
Ingredients
- 380 g tiger shrimp
- 350 g Baby Spinach
- 450 g pak choi, roughly sliced
- 1 tablespoon Thai fish sauce
- 1 tablespoon dark soy sauce
- 3 tablespoons sweet chili sauce
- 1 tablespoon sunflower oil or 1 tablespoon vegetable oil
- 1 teaspoon cornflour
- 2 tablespoons water
- 1/2 lime, juice and zest of, finely zested
Method
- Combine the lime zest and juice with the fish sauce, dark soy sauce, sweet chilli sauce, water, and cornflour in a bowl. Set this mixture aside.
- Warm the oil in a wok or a large frying pan. Stir fry the roughly sliced pak choi for 2 minutes, then remove it from the pan. In the same pan, stir fry the tiger shrimp until they turn pink and are cooked through.
- Return the cooked pak choi to the wok with the prawns. Pour in the prepared sauce and cook everything together until it reaches a simmer. Stir thoroughly to coat and serve immediately with fresh white rice.
