Superfood Shrimp Scampi
This quick and healthy shrimp scampi is loaded with nutritious ingredients like baby spinach, cherry tomatoes and olives. It comes together in about 15 minutes, making it a perfect speedy meal. The recipe is designed for a single serving but can easily be scaled up to feed more people. Serve the garlicky shrimp and vegetable sauce over freshly cooked angel hair pasta.
Ingredients
- angel hair pasta (1 serving)
- 1/2 tablespoon olive oil
- 1/2 lb shrimp, peeled and deveined
- 1 pinch salt
- 1 tablespoon olive (chopped)
- 1 tablespoon parsley (chopped)
- 1 garlic clove (minced)
- 1 cup fresh Baby Spinach
- 1/2 cup cherry tomatoes (halved)
- 1/4 cup chicken broth
- 1/8 cup white wine
Method
- Cook the angel hair pasta following the directions on its packet. this should take roughly 10 minutes, accounting for the time needed to bring the water to a boil.
- As the pasta cooks, warm the olive oil in a pan, then add the shrimp with a pinch of salt and cook them for 3 to 5 minutes.
- Take the shrimp out of the pan and put in the chopped olives, parsley and minced garlic.
- After cooking for 1 minute, introduce the baby spinach, halved cherry tomatoes, chicken broth and white wine to the pan.
- Place a lid on the pan and allow the mixture to cook for 3 minutes.
- Mix the cooked shrimp back into the sauce and serve it alongside the prepared pasta.
