This quick and healthy shrimp scampi is loaded with nutritious ingredients like baby spinach, cherry tomatoes and olives. It comes together in about 15 minutes, making it a perfect speedy meal. Superfood Shrimp Scampi

Ingredients

  • angel hair pasta (1 serving)
  • 1/2 tablespoon olive oil
  • 1/2 lb shrimp, peeled and deveined
  • 1 pinch salt
  • 1 tablespoon olive (chopped)
  • 1 tablespoon parsley (chopped)
  • 1 garlic clove (minced)
  • 1 cup fresh Baby Spinach
  • 1/2 cup cherry tomatoes (halved)
  • 1/4 cup chicken broth
  • 1/8 cup white wine

Method

  1. Cook the angel hair pasta following the directions on its packet. this should take roughly 10 minutes, accounting for the time needed to bring the water to a boil.
  2. As the pasta cooks, warm the olive oil in a pan, then add the shrimp with a pinch of salt and cook them for 3 to 5 minutes.
  3. Take the shrimp out of the pan and put in the chopped olives, parsley and minced garlic.
  4. After cooking for 1 minute, introduce the baby spinach, halved cherry tomatoes, chicken broth and white wine to the pan.
  5. Place a lid on the pan and allow the mixture to cook for 3 minutes.
  6. Mix the cooked shrimp back into the sauce and serve it alongside the prepared pasta.
