These speedy steak tacos bring Taco Tuesday energy to any day. Skirt steak is sliced, seasoned with chilli powder and oregano, then quickly stir-fried with red onion. Served on warm corn tortillas, they are perfect for a build-your-own taco bar with sour cream, guacamole, salsa verde, pico de gallo, and cheese. The entire dish comes together in just 10 minutes for a satisfying main course.

15-Minute Stir-fried Steak Tacos

Ingredients

  • 1 pound skirt steak
  • 1 tablespoon chilli powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon sugar
  • Salt and freshly ground black pepper
  • Eight 6-inch corn tortillas
  • 1 tablespoon vegetable oil
  • 1 medium red onion, halved and cut into 1/4-inch-thick slices
  • Sour cream, guacamole, salsa verde, pico de gallo and shredded Mexican-blend cheese, for serving

Method

  1. Slice the skirt steak into 3-inch pieces along the grain, then cut each piece across the grain into strips about 1/3-inch thick. Place the steak strips in a medium bowl and combine with the chilli powder, dried oregano, sugar, 3/4 teaspoon salt, and several grinds of black pepper.
  2. Place a large nonstick skillet over high heat. While it heats, wrap the corn tortillas in a clean dishtowel and microwave them on full power for 1 minute. Keep them wrapped in the towel until you are ready to assemble the tacos.
  3. Once the skillet is hot, pour in the vegetable oil. Add the seasoned steak in a single layer. Allow it to cook without stirring for 2 minutes, then stir well and continue cooking until browned, which should take about 1 1/2 minutes more.
  4. Move the cooked steak to a medium bowl. Promptly add the sliced red onion to the same hot skillet. Stir the onion until it browns and softens slightly, cooking for about 1 1/2 minutes. Transfer the onion to the bowl with the steak and mix together.
  5. Arrange a serving station with the combined steak and onions, the warmed tortillas, and bowls of sour cream, guacamole, salsa verde, pico de gallo, and shredded Mexican-blend cheese for everyone to assemble their own tacos.
