Spitfire Prawns
Create these flavourful spitfire prawns as a speedy side dish. Jumbo prawns are sautéed with garlic and shallots, then tossed in a vibrant mix of lime juice, hot sauce, and Cajun spices. Ingredients
- For the seasoning:
- 1 lime, juiced
- 2 ounces (1/4 cup) hot pepper sauce
- 1 tablespoon ground cumin
- 1/2 teaspoon chilli flakes
- 1 tablespoon Cajun seasoning
- For the prawns:
- 4 cloves garlic, crushed and chopped
- 2 shallots, chopped
- 1 tablespoon extra-virgin olive oil
- 2 tablespoons butter, cut into pieces
- 2 pounds jumbo prawns peeled and de-veined
- 12 to 15 blades fresh chives, chopped, for garnish
Method
- Place a large nonstick skillet on the heat to preheat.
- Mix the lime juice, hot pepper sauce, ground cumin, chilli flakes, and Cajun seasoning together in a bowl.
- Cook the crushed garlic and chopped shallots in the olive oil and butter for 1 minute.
- Add the peeled prawns to the pan and cook for 3 minutes, turning them often.
- Transfer the cooked prawns directly from the pan into the bowl of seasoning and toss to coat them well.
- Scatter the chopped chives over the top for garnish before serving warm or chilled.
