15 Minute Shrimp Scampi
This speedy Italian shrimp scampi delivers a vibrant meal in just 20 minutes. The dish combines succulent shrimp with a fragrant sauce of garlic, butter, white wine, and fresh lemon. It is tossed with delicate capellini noodles and finished with a scattering of chopped parsley and a dusting of Parmesan cheese for a simple yet flavourful dinner.
Ingredients
- 1 tablespoon olive oil
- 1 lb. raw shrimp, shells and tails removed (see notes)
- 4 large cloves garlic, minced
- 1 tablespoon butter (can add more to taste)
- 2 tablespoons white wine
- 1/4 cup minced lemon pieces*
- 8 ounces uncooked capellini noodles (I used Jovial gluten free)
- a handful of fresh chopped parsley
- salt and pepper to taste
- Parmesan cheese for topping
Method
- Begin by bringing a pot of water to a boil for the noodles. Warm the olive oil in a small skillet. Pat the shrimp dry and add them to the hot oil. Allow them to cook for 1-2 minutes without moving before turning to cook the other side. Season with salt and pepper in the pan. Once cooked through, transfer the shrimp to a plate and set aside.
- Cook the noodles in the boiling water according to the package directions. In the same skillet, add the garlic and butter. Cook for 3 minutes, stirring often, until the garlic is soft and aromatic. Pour in the wine and let it simmer for a few minutes to reduce. Stir in the lemon pieces and cook for another 1-2 minutes. Return the shrimp to the skillet just to reheat.
- Drain the cooked noodles and place them back in their saucepan. Pour the shrimp mixture with its sauce over the noodles and add the fresh parsley. Toss everything together to combine thoroughly. Adjust the seasoning with salt and pepper, then serve topped with a little Parmesan cheese.
