This speedy British side dish or supper is a brilliant no-cook option, ideal for using up leftover vegetables. It combines shredded red cabbage, celery, Brussels sprouts, apple, and grated carrot with mixed nuts. Everything is tossed in a simple, fruity dressing made from oil, cranberry sauce, and orange juice, then finished with crumbled Stilton. It's a vibrant, crunchy salad that can be prepared in a flash.

15-Minute Mix & Match Salad

Ingredients

  • 1/2 red cabbage about 450g/1lb
  • 2 celery sticks, with their leaves
  • 175g Brussels sprouts trimmed
  • 1 red-skinned eating apple cored, but with the skin left on
  • 2 carrots peeled
  • 175g mixed nut such as brazils, walnuts and roasted cashews
  • 100g stilton
  • 6 tbsp light olive oil or sunflower oil
  • 4 tbsp cranberry sauce
  • 5 tbsp fresh orange juice

Method

  1. Attach the slicing blade to your food processor. Remove the hard core from the cabbage, then shred the leaves. Use the processor to slice the celery, sprouts, and apple. Switch to the grating attachment to grate the carrots. Chop the nuts roughly, either in the processor or by hand.
  2. Combine the oil and cranberry sauce in a small bowl. The mixture will appear thick and cloudy. Proceed by adding the orange juice, which will thin it into a smooth, fruity dressing.
  3. Transfer all the prepared vegetables and nuts into a large bowl. Pour the dressing over the top and toss everything to coat. (You can store the salad in a covered container in the fridge for up to a day.) Add seasoning and serve with the Stilton crumbled over the salad.
