15-minute mackerel noodles
This speedy noodle dish combines flaked peppered smoked mackerel with fresh vegetables and rice noodles. A simple dressing of soy sauce, garlic and ginger brings everything together. It's a flavourful and satisfying meal that can be prepared for lunch or dinner in a quarter of an hour, making it perfect for busy days. The recipe serves four people.
Ingredients
- 250g pack of medium rice noodles
- 2 tbsp soy sauce
- 1 large garlic clove crushed
- small knob of fresh root ginger grated
- 1/2 cucumber halved then sliced
- bunch of spring onions sliced
- handful of coriander leaves
- 4 peppered smoked mackerel fillets, broken into large flakes
Method
- 1. Boil water in a kettle and place the noodles in a large heatproof bowl. Pour the boiling water over them and allow to stand for 5 mins. While they soak, combine the soy sauce, garlic, ginger and 3 tbsp of water to create a dressing. Drain the noodles, rinse them with cold water and drain once more. Transfer to a bowl and add the cucumber, spring onions, half the coriander and half of the dressing, tossing to combine. Arrange the mackerel flakes on top of each serving, pour over the rest of the dressing and finish with the remaining coriander leaves. Serve immediately.
