15-Minute Mac and Cheese in a Mug
Prepare a satisfying single portion of macaroni and cheese directly in a mug using your microwave. This convenient method combines pasta with cheese, cream and your choice of ham or chicken for a complete meal. It is an ideal solution for a fast lunch or snack, requiring minimal cleanup. The entire process from start to finish takes only about 15 minutes.
Ingredients
- 1/3 cup elbow macaroni
- 1 slice deli ham, chopped or 1/3 cup chopped cooked chicken
- Dash of Italian seasoning blend
- 1/4 to 1/2 cup double cream or milk
- 1/4 cup shredded Cheddar-Monterey Jack cheese blend
- 1 slice chilli cheese, torn to bits
- Salt and freshly ground black pepper
Method
- Place the elbow macaroni, chopped ham or chicken and Italian seasoning into a large coffee or soup mug. Pour in enough water to cover the pasta by at least 2 inches. Cover the mug with a paper towel and set it on a plate to catch any overflow. Microwave on high until the pasta is tender, which will take 4 to 8 minutes. Drain the contents through a colander, then return the pasta and meat to the mug.
- Pour the double cream or milk into the mug with the pasta. Add the shredded Cheddar-Monterey Jack cheese, the torn chilli cheese, a pinch of salt and some black pepper. Microwave the mixture on high, stopping to stir it every 25 to 30 seconds, until the cheese has fully melted into a sauce. This should take up to 90 seconds. Enjoy it while warm.
