Ingredients

  • 1/3 cup elbow macaroni
  • 1 slice deli ham, chopped or 1/3 cup chopped cooked chicken
  • Dash of Italian seasoning blend
  • 1/4 to 1/2 cup double cream or milk
  • 1/4 cup shredded Cheddar-Monterey Jack cheese blend
  • 1 slice chilli cheese, torn to bits
  • Salt and freshly ground black pepper

Method

  1. Place the elbow macaroni, chopped ham or chicken and Italian seasoning into a large coffee or soup mug. Pour in enough water to cover the pasta by at least 2 inches. Cover the mug with a paper towel and set it on a plate to catch any overflow. Microwave on high until the pasta is tender, which will take 4 to 8 minutes. Drain the contents through a colander, then return the pasta and meat to the mug.
  2. Pour the double cream or milk into the mug with the pasta. Add the shredded Cheddar-Monterey Jack cheese, the torn chilli cheese, a pinch of salt and some black pepper. Microwave the mixture on high, stopping to stir it every 25 to 30 seconds, until the cheese has fully melted into a sauce. This should take up to 90 seconds. Enjoy it while warm.
