Ingredients
- 2 tablespoons dark soy sauce (sub regular soy sauce if needed)
- 1 tablespoon light soy sauce (sub regular soy sauce if needed)
- 3 tablespoons oyster sauce
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- 1 clove of garlic, grated (optional)
- 4-6 ounces uncooked ramen noodles (affiliate link)
- 1 tablespoon sesame oil
- 3 green onions, chopped (separate green parts from white parts – you’ll use both separately)
- 2-3 cups julienne cut or chopped vegetables like carrots, red peppers, cabbage, bok choy, mushrooms, or broccoli
- 1-2 tablespoons mirin
Method
- Combine all the ingredients for the sauce by shaking them together in a jar.
- Prepare the noodles by cooking them as directed on the package, then drain and set them aside.
- Warm 1 tablespoon of sesame oil in a large wok or skillet. Cook the white parts of the green onions and your vegetables until tender, which should take about 5 minutes. Pour in 1-2 tablespoons of mirin to deglaze the pan. Mix in the cooked noodles and roughly half of the prepared sauce, tossing everything to coat. Add more sauce according to your preference, then serve garnished with the remaining green onion tops.
