This quick British pasta dish delivers a satisfying meal in a short time. Chicken pieces are fried until golden, then coated in a tangy sauce made from wholegrain mustard and fresh orange juice. It's tossed with pasta bows and broccoli florets, finished with toasted flaked almonds for a nutritious and flavourful lunch or supper that is also low in fat.

15-Minute Chicken Pasta

Ingredients

  • 350g pasta bows (farfalle)
  • 300g broccoli cut into small florets
  • 1 tbsp olive oil
  • 3 large skinless boneless chicken breasts, cut into bite-sized chunks
  • 2 garlic cloves crushed
  • 2 tbsp wholegrain mustard
  • juice of 1 large or 2 small oranges
  • 25g flaked almond toasted

Method

  1. Boil the pasta bows in salted water as directed on the packet. In the final 3 minutes of cooking, add the broccoli florets to the same pan.
  2. As the pasta cooks, warm the olive oil in a large frying pan. Add the chicken chunks and fry for 8-10 minutes until cooked and golden, stirring now and then. Stir in the crushed garlic for the last 2 minutes.
  3. Combine the mustard and orange juice in a bowl. Pour this over the chicken and let it simmer gently for 1-2 minutes. Drain the pasta and broccoli, keeping 3 tablespoons of the cooking water. Mix the pasta and broccoli with the chicken, adding the reserved pasta water and the toasted almonds. Season thoroughly before serving.
