15 Minute Chicken, Broccoli and Rice Dinner
This convenient one dish meal combines chicken breasts with broccoli and instant rice in a creamy sauce. The chicken is first browned, then everything simmers together in the pan. Ingredients
- 4 boneless skinless chicken breasts
- 1 tablespoon vegetable oil
- 1 (10 ounce) can condensed cream of chicken soup
- 1 3/4 cups milk or 1 3/4 cups water
- 2 cups Minute Rice, uncooked
- 2 cups broccoli florets (fresh or frozen & thawed)
Method
- Brown the chicken breasts in the vegetable oil in a large frying pan for 5 minutes on each side, then take them out of the pan.
- Pour the condensed cream of chicken soup and the milk into the same pan and bring the mixture to a boil.
- Mix the uncooked Minute Rice and the broccoli florets into the pan, then place the browned chicken on top and cover the pan with a lid.
- Leave the covered pan to cook for 5 minutes.
