15-Bean Soup

Ingredients

  • 1 onion, minced
  • 6 garlic cloves, minced
  • 1 tablespoon vegetable oil
  • 2 teaspoons minced fresh thyme (or 1/2 t. dried)
  • 6 cups low sodium chicken broth
  • 12 ounces white mushrooms, quartered
  • 1 1/4 cups fifteen-bean soup mix (flavoring packet discarded, picked over, pre-soaked overnight, drained)
  • 4 ounces bacon (about 4 slices)
  • 1/2 ounce dried porcini mushrooms, rinsed and minced
  • 2 bay leaves
  • 8 ounces swiss chard, stemmed and leaves sliced 1/2 inch thick
  • 1 (14 1/2 ounce) can whole tomatoes, drained and chopped medium
  • salt
  • pepper

Method

  1. Soften the minced onion and garlic with the oil and thyme in a microwave, stirring now and then, for about 5 minutes. Move this mixture to your slow cooker.
  2. Add the chicken broth, quartered white mushrooms, the pre-soaked beans, bacon, minced porcini mushrooms, and bay leaves to the slow cooker and combine.
  3. Put the lid on and cook until the beans are completely tender. This will take 9-11 hours on the LOW setting or 5-7 hours on HIGH.
  4. After cooking, let the soup sit undisturbed for 5 minutes. Then, use a large spoon to skim any fat from the surface.
  5. Take out and discard the bacon slices and the bay leaves.
  6. Mix in the sliced Swiss chard and the chopped tomatoes. Cover the cooker again and cook on the HIGH setting until the chard is tender, which should take 20-30 minutes.
  7. Finally, taste the soup and add salt and pepper as needed before serving.
