It combines a dried 15 bean mix with ham hocks, vegetables, and a rich tomato base, all cooked slowly until the beans are soft. Perfect for a cosy meal on a cold day. Ingredients
- 1 (16 -20 ounce) bag dried 15 bean mix, with seasoning pack
- 1 (8 ounce) can tomato sauce
- 3 ham hocks or 1 meaty ham bone
- 1 (16 ounce) can diced tomatoes
- 1/2 head garlic, minced
- 1 onion, chopped
- 3 stalks celery, chopped
- 3 carrots, chopped
- 2 chicken bouillon cubes
- 6 cups water
- 2 bay leaves
- seasoning salt
- pepper, to taste
Method
- Presoak the beans overnight, or follow the package instructions for a quick boil.
- Place all the listed ingredients into your slow cooker.
- Cook the soup on a high setting for 6-8 hours, until the beans have softened.
- Take out the ham hocks or bone and the bay leaves. You may strip any meat from the bone and return it to the pot.
- Serve the soup and enjoy it.
- For a stovetop version, simmer everything together on a low heat for 3-4 hours until the beans are tender.
