Ingredients

  • 2 cups flour
  • 2 cups sugar
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 3/4 cup oil
  • 4 eggs
  • 3 cups carrots, grated
  • 1/4 teaspoon ground cloves
  • 1/4 cup margarine or 1/4 cup butter
  • 4 ounces cream cheese, softened
  • 1 teaspoon vanilla
  • 1 3/4 cups powdered sugar
  • 1/2 cup chopped nuts
  • 1/2 cup coconut
  • 1/2 cup raisins

Method

  1. Combine all the listed ingredients in a large mixing bowl and beat the mixture for 4 minutes.
  2. Transfer the batter into a greased 9x13 inch baking pan.
  3. Place the pan in an oven preheated to 350 degrees and bake for 35 to 40 minutes.
  4. Prepare the frosting by creaming together the margarine, softened cream cheese and vanilla, then gently folding in the powdered sugar, chopped nuts, coconut and raisins.
  5. Once the baked cake has cooled completely, spread the prepared frosting over the top.
