This classic carrot cake, known as 14 Karat Cake, is a spiced dessert baked in a 9x13 inch pan. The batter incorporates grated carrots and is topped with a creamy frosting made from cream cheese, butter and vanilla, finished with chopped nuts, coconut and raisins. It requires 50 minutes to prepare and bake, yielding 15 servings.
Ingredients
- 2 cups flour
- 2 cups sugar
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon allspice
- 3/4 cup oil
- 4 eggs
- 3 cups carrots, grated
- 1/4 teaspoon ground cloves
- 1/4 cup margarine or 1/4 cup butter
- 4 ounces cream cheese, softened
- 1 teaspoon vanilla
- 1 3/4 cups powdered sugar
- 1/2 cup chopped nuts
- 1/2 cup coconut
- 1/2 cup raisins
Method
- Combine all the listed ingredients in a large mixing bowl and beat the mixture for 4 minutes.
- Transfer the batter into a greased 9x13 inch baking pan.
- Place the pan in an oven preheated to 350 degrees and bake for 35 to 40 minutes.
- Prepare the frosting by creaming together the margarine, softened cream cheese and vanilla, then gently folding in the powdered sugar, chopped nuts, coconut and raisins.
- Once the baked cake has cooled completely, spread the prepared frosting over the top.
