This recipe yields a smaller, well-seasoned meatloaf ideal for two to four people. The key flavour comes from using chili sauce in the mix and as a glaze, along with crumbled saltine crackers for texture. It bakes in a standard meatloaf pan for one hour. Ingredients
- 1 egg
- 1/3 cup chili sauce
- 1/3 cup milk
- 1/2 teaspoon Worcestershire sauce
- 2 tablespoons minced onions
- 2 tablespoons chopped bell peppers
- 1 lb ground beef
- 1 dash salt and pepper, to taste
- 1 dash garlic powder
- 13 saltine crackers, crumbled
Method
- Set your oven to heat to 325°F.
- In a bowl, combine the egg, chili sauce, milk, and Worcestershire sauce with a whisk.
- Mix the minced onion and chopped bell pepper into the wet ingredients.
- Crumble the ground beef over the mixture, then season it with salt, pepper, and garlic powder.
- Use a spoon to combine everything thoroughly.
- Incorporate the crumbled saltine crackers, mixing well with your hands.
- Shape the mixture into a loaf and transfer it to the perforated top section of a meatloaf pan.
- Place this top section into the bottom pan.
- Smooth the surface of the loaf, then spread a thin layer of chili sauce, about 1 tablespoon, evenly over the top.
- Bake the meatloaf for one hour.
