125 Year-Old Walnut Party Pound Cake
This traditional walnut pound cake recipe has been cherished for generations. It creates a rich, dense loaf packed with chopped black walnuts and flavoured with vanilla and rum extract. The batter is baked in a greased and floured tube pan, requiring a long, slow bake without disturbing the oven. The result is a perfect cake for sharing at any special occasion or party.
Ingredients
- 1/2 lb butter
- 3 cups sugar
- 1 teaspoon rum extract
- 3 cups flour
- 1 cup half-and-half
- 1/2 cup shortening
- 5 eggs
- 1 teaspoon vanilla
- 1 teaspoon baking powder
- 1 cup black walnut, chopped
Method
- Set your oven to heat to 325 degrees.
- Cream together the butter and the shortening. Incorporate the sugar and beat the mixture until it is very light. Next, beat in the flavouring extracts. Add the flour, which has been mixed with the baking powder, to the batter, alternating with the half-and-half. Begin and end this process with the flour. Gently fold the chopped walnuts into the mixture.
- Transfer the batter into a tube pan that has been prepared by greasing and flouring it. You can use one very large pan measuring 4 3/4 x 9 inches and bake it for 80 minutes. Alternatively, use two regular pans sized 3 1/2 x 9 inches and bake them for 70 minutes. Bake at 325 degrees. It is important not to open the oven door during the initial hour of baking.
