1200 Watt Microwave Peanut Brittle

Ingredients

  • 1 cup white sugar
  • 1 tablespoon molasses (unsulphured)
  • 1/2 cup less 1 tablespoon corn syrup
  • 2 cups salted peanuts
  • 1 teaspoon vanilla
  • 1 tablespoon butter
  • 1 teaspoon baking soda

Method

  1. Prepare a baking sheet by lining it with foil or parchment paper and coating it with cooking spray or butter.
  2. Measure one tablespoon of molasses into a half cup measure, then top it up with corn syrup. It helps to spray the cup first for easier release.
  3. Combine the corn syrup mixture with the white sugar in a large eight-cup bowl. Stir well, then microwave on high for 2 minutes. Take it out, stir, and microwave for a further 1 minute.
  4. Take the bowl from the microwave and stir in the salted peanuts until coated. Microwave the mixture again for 2 minutes.
  5. Remove the bowl and mix in the butter and vanilla extract. Return it to the microwave for 1 minute.
  6. Take the hot mixture out and immediately stir in the baking soda. it will become pale and foamy. Quickly pour and spread the candy onto your prepared sheet. Allow it to cool at room temperature or in the refrigerator. Soak the mixing bowl in hot water to help with cleaning.
