12 Minute Corn Chowder
This creamy corn chowder is a speedy and delicious meal, ready in just 12 minutes. The secret to its rich texture is the use of evaporated milk. It combines potatoes, onion, and both cream-style and whole corn for a satisfying chowder that is simple to prepare and full of flavour.
Ingredients
- 1 1/2 cups water
- 1 1/2 cups potatoes, cubed
- 1 small onion, chopped fine
- 1 (14 1/2 ounce) can cream-style corn
- 1 (14 1/2 ounce) can whole corn or 1 (11 ounce) can niblet corn
- 2 (12 ounce) cans evaporated milk
- 1 teaspoon butter
- salt and pepper
Method
- Drain the liquid from the can of whole corn, then add water to this liquid to reach a total of 1 1/2 cups.
- Place the measured water, chopped onion, salt, pepper, and cubed potatoes into a medium saucepan.
- Bring the mixture to a hard simmer and cook for about 10 minutes.
- Turn the heat down to low.
- Stir in the evaporated milk and the teaspoon of butter.
- Taste the chowder and adjust the salt and pepper if needed, then serve immediately.
