11 Layer Salad
This impressive 11 layer salad builds on the traditional favourite by adding extra vegetables for more flavour and texture. The secret is the double layering of crisp lettuce, a creamy sweet dressing, and a colourful mix of fresh produce and bacon. It is an ideal make-ahead dish for gatherings, as chilling allows the flavours to meld beautifully. Expect this show-stopping salad to be the highlight of any holiday table or potluck lunch.
Ingredients
- 2 (6 -9 ounce) bags fancy lettuce (I use one bag American blend and one bag of fancy lettuce like romaine or even spinach works great)
- 1 lb bacon (cooked and crumbled)
- 1 small red onion (diced, can substitute green onions if desired)
- 0.5 (12 -16 ounce) bag frozen peas (thawed)
- 1 small green pepper (diced)
- 2 cups fresh cauliflower (cut into bite size pieces)
- 2 cups fresh broccoli (cut into bite size pieces)
- 1 cup fresh mushrooms (sliced)
- cherry tomatoes
- 1 tablespoon italian seasoning
- 3 cups mayonnaise or 3 cups Miracle Whip
- 2/3 cup sugar
Method
- Cook the bacon until crisp, then drain and crumble it.
- Combine the mayonnaise and sugar in a bowl, stirring until well blended, then set this mixture aside.
- Prepare the vegetables by dicing the red onion and green pepper, and cutting the cauliflower and broccoli into bite size pieces. Slice the mushrooms.
- Take a large 9x13-inch pan to assemble the salad layers.
- Place half of the lettuce as the first layer in the pan.
- Spread half of the prepared mayonnaise mixture over the lettuce.
- Add a layer using half of the diced onion, green pepper, cauliflower, broccoli, mushrooms, shredded cheese, crumbled bacon, and thawed peas.
- Repeat the entire layering sequence one more time with the remaining ingredients.
- Finish the salad by topping it with halved cherry tomatoes.
- Sprinkle the Italian seasoning evenly over the top.
- Let the salad set and chill in the refrigerator before it is served.
