This is the cherished potato salad recipe from my childhood, renowned for its fantastic taste. It consistently receives recipe requests whenever I share it at gatherings. The combination of diced potatoes, eggs, and crisp vegetables is coated in a tangy, creamy dressing blend. For optimal flavour, it is recommended to prepare it a day in advance.

1000 Island Potato Salad

Ingredients

  • 12 potatoes, cooked, peeled and diced
  • 6 hard-boiled eggs, diced
  • 1 sweet onion, diced small
  • 1 cup celery, chopped
  • 1 cup sweet gherkin, chopped
  • 1/2 cup mayonnaise
  • 1/4 cup thousand island dressing
  • 1/4 cup French dressing
  • 1/4 cup mustard
  • salt and pepper

Method

  1. Combine the diced potatoes, eggs, onion, celery and gherkins in a large mixing bowl.
  2. Whisk the mayonnaise, thousand island dressing, French dressing, mustard, salt and pepper together in another bowl.
  3. Gently stir the dressing into the potato mixture, adding it a little at a time.
  4. Continue adding the dressing gradually until it reaches your preferred taste, as you might not need it all.
  5. For the best results, prepare this salad a day ahead and let it chill in the refrigerator overnight.
