1000 Island Potato Salad
This is the cherished potato salad recipe from my childhood, renowned for its fantastic taste. It consistently receives recipe requests whenever I share it at gatherings. The combination of diced potatoes, eggs, and crisp vegetables is coated in a tangy, creamy dressing blend. For optimal flavour, it is recommended to prepare it a day in advance.
Ingredients
- 12 potatoes, cooked, peeled and diced
- 6 hard-boiled eggs, diced
- 1 sweet onion, diced small
- 1 cup celery, chopped
- 1 cup sweet gherkin, chopped
- 1/2 cup mayonnaise
- 1/4 cup thousand island dressing
- 1/4 cup French dressing
- 1/4 cup mustard
- salt and pepper
Method
- Combine the diced potatoes, eggs, onion, celery and gherkins in a large mixing bowl.
- Whisk the mayonnaise, thousand island dressing, French dressing, mustard, salt and pepper together in another bowl.
- Gently stir the dressing into the potato mixture, adding it a little at a time.
- Continue adding the dressing gradually until it reaches your preferred taste, as you might not need it all.
- For the best results, prepare this salad a day ahead and let it chill in the refrigerator overnight.
