100% Yummy Banana Bread
This recipe delivers a truly wonderful banana bread, perfect for using up over-ripe fruit. The loaf is moist and flavourful, combining mashed bananas with sugar, butter, and vanilla. Chopped nuts add a lovely texture. It's best enjoyed fresh from the oven, perhaps with a spread of butter. The whole process takes about 75 minutes from start to finish.
Ingredients
- 3 over-ripe bananas, mashed
- 1 cup sugar
- 1 egg
- 1/3 cup soft butter
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1/2 cup chopped nuts (pecans, almonds, what ever you like)
Method
- Place the over-ripe bananas into a large mixing bowl and mash them thoroughly until they form a smooth paste.
- Incorporate the sugar, egg, soft butter, flour, baking soda, vanilla, and chopped nuts into the bowl with the banana paste, mixing everything together until fully combined.
- Transfer the complete batter into a loaf pan that has been greased beforehand.
- Place the pan in an oven preheated to 350°F and bake for 50-60 minutes. The bread is ready when a toothpick inserted into its centre comes out clean.
