Ingredients
- 2 cups whole wheat flour
- 2 tablespoons white sugar
- 2 teaspoons baking powder
- 0.5 teaspoon baking soda
- 0.5 teaspoon salt
- 2.25 cups buttermilk
- 2 large eggs
- 4 tablespoons vegetable oil, divided
Method
- Collect all the required ingredients.
- In a mixing bowl, combine the whole wheat flour, white sugar, baking powder, baking soda, and salt with a whisk.
- In another bowl, whisk together the buttermilk, eggs, and 3 tablespoons of vegetable oil until the mixture is smooth.
- Add the wet mixture to the bowl of dry ingredients and mix gently until just incorporated. the batter will be quite thick.
- Warm the remaining 1 tablespoon of oil in a cast iron skillet for 5 minutes. For each pancake, pour 1/3 cup of batter into the pan, working in batches.

- Turn the pancakes over and continue cooking for about 2 more minutes until they are cooked through and nicely browned on the second side.
