This recipe creates a versatile dough for homemade 100% whole wheat graham crackers, which can also be used as a pie crust. The crackers are known for their crisp texture and popularity with children. The method involves mixing dry and wet ingredients, rolling the dough thinly, scoring, and baking until crisp. For best results, ensure the dough is rolled very thin and baked fully to achieve the right crunch. The yield is approximately 60 crackers.

100% Whole Wheat Graham Crackers or Pie Crust

Ingredients

  • 2 1/4 cups whole wheat flour
  • 1/2 cup turbinado sugar (sucanat or brown sugar would work too)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 4 tablespoons honey
  • 1/4 cup water
  • 1 teaspoon vanilla
  • 8 tablespoons butter (melted)

Method

  1. Heat your oven to 350 degrees.
  2. Melt the butter using a microwave or on the hob.
  3. Combine the initial six dry ingredients in a bowl.
  4. Pour in the remaining ingredients and stir until a dough ball forms, adding a touch more water if necessary.
  5. Prepare two jelly roll pans by lining them with parchment paper or a Silpat.
  6. Divide the dough in half, placing each portion on a pan, then use a rolling pin to flatten it out to cover the pan as much as desired, noting the thickness will not change much during baking.
  7. Use a pizza or pasta cutter to lightly score the dough into rectangular cracker shapes.
  8. Bake for 15-20 minutes until the crackers are crisp and just starting to turn brown.
  9. Allow the crackers to cool completely on a wire rack.
