Ingredients

- 1 tablespoon salt
Method
- Use a kitchen mill to grind 8 or 9 cups of wheat.
- Optionally, you can include about 1/2 cup millet and 1/2 cup flax seed.
- Place the oil, water, dough enhancer and honey into the Bosch mixing bowl.
- Pulse the machine a few times to combine these wet ingredients.
- Introduce roughly 6 cups of the fresh flour and pulse again to moisten it.
- Mix in the yeast and salt.
- If using whole grains like millet or flax, add them now rather than during the initial grinding.
- Start the machine and slowly add more flour, allowing each addition to be absorbed.
- Stop adding flour once the dough starts to pull away from the bowl's base.
- The dough will clean the sides of the bowl as it kneads.
- Continue kneading the dough for 7 to 10 minutes.
- Take the dough out and form it into four loaves.
- Place each loaf into a greased 8x4 inch pan.
- Cover the pans with a tea towel and a sheet of plastic.
