100% Whole Wheat Biscuits

⏱ 28 mins 🍽 12 serving(s) 🏷 Breads

These homemade biscuits are made entirely with whole wheat pastry flour for a wholesome twist. The dough benefits from an overnight soak before baking, which helps develop flavour and texture. You will mix in butter, milk, and apple cider vinegar, then fold in leavening agents before cutting and baking. They are ready in under 30 minutes of active time, yielding a dozen tender biscuits.

100% Whole Wheat Biscuits

Ingredients

  • 2 1/2 cups whole wheat pastry flour
  • 6 tablespoons high quality butter
  • 3/4 cup milk
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon aluminum free baking powder
  • 3/4 teaspoon sea salt

Method

  1. Place the flour in a bowl and cut the butter into it, working it until the mixture resembles small peas.
  2. Pour in the milk and apple cider vinegar. If the mixture seems too dry, add a little more milk gradually until the dough is adequately moistened.
  3. Combine everything well to form a cohesive dough.
  4. Let the dough rest and soak for a period ranging from overnight up to 24 hours.
  5. Once soaked, incorporate the baking soda, baking powder, and sea salt into the dough.
  6. With your hands, fold the dough over itself 10 to 15 times, pressing down to ensure the dry ingredients are fully mixed in.
  7. Transfer the dough to a floured surface and roll it into a rectangle roughly an inch thick. Slice it into 12 pieces. The uncut dough can be frozen at this stage for future use.
  8. Arrange the biscuit pieces on a baking sheet that does not require greasing. Bake at 450 degrees for 8 to 10 minutes.
