This Italian-inspired main dish features boneless chicken breasts coated in a savoury mix of grated parmesan cheese, breadcrumbs, and dried herbs. The chicken is first dipped in melted butter before being rolled in the dry mixture, creating a flavourful crust. It is then baked in the oven until perfectly cooked through. Ingredients
- 6 boneless skinless chicken breasts (approx. 2 pounds)
- 2 tablespoons melted butter or 2 tablespoons margarine
- 1/2 cup grated parmesan cheese (2 oz.)
- 1/4 cup dry breadcrumbs
- 1 teaspoon dried oregano
- 1 teaspoon parsley flakes
- 1/4 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Method
- Heat your oven to 400°F.
- Lightly coat a 13x9-inch baking pan with non-stick cooking spray.
- Place the melted butter in one shallow dish. In a separate shallow dish, combine the grated parmesan cheese, dry breadcrumbs, dried oregano, parsley flakes, paprika, salt, and pepper.
- Take each chicken breast and dip it into the melted butter.
- Next, roll the buttered chicken in the dry parmesan mixture until fully coated.
- Arrange the coated chicken pieces in the prepared baking dish.
- Bake for 20-25 minutes, or until the chicken juices run clear when pierced.
