100% Healthy & Lucious Spice Cake (Low Calorie)
This cake proves you can enjoy a sweet treat without guilt. It contains no butter, added sugar, or flour, yet remains deliciously moist and flavourful. Using ingredients like oats, banana, and walnuts, the whole batch is roughly 600 calories and almost fat free. It's a perfect way to satisfy a sweet craving in a completely wholesome way.
Ingredients
- 1/2 cup canned corn (can be replaced with boiled sweet potato or pumkin)
- 4 tablespoons 100% apple juice
- 1 egg
- 2 egg whites
- 1 cup instant oats
- 1 banana
- 1 handful walnuts
- 1 1/2 teaspoons baking powder
- 2 tablespoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 tablespoon cinnamon (replace with ground cardemom)
- 1 teaspoon vanilla sugar (optional)
Method
- Preheat the oven to 200 celsius / 395 fahrenheit.
- Rinse the canned corn under cold water two or three times, then drain it well.
- Blend the corn, apple juice, and one whole egg together until you have a smooth puree.
- In a separate blender, whisk the egg whites until they form very stiff peaks.
- Transfer the corn puree to a mixing bowl and stir in the instant oats.
- Add the baking powder, vanilla sugar if using, and all the ground spices to the bowl, mixing thoroughly.
- Slice the banana into coins, then cut each coin into about six smaller pieces. Chop the walnuts.
- Fold the chopped banana and walnuts into the corn and oat mixture.
- Take a large spoon and gently incorporate about four tablespoons of the stiff egg whites into the main batter.
- Pour the corn and oat mixture into the bowl with the rest of the egg whites, but avoid stirring it completely.
- Fold the ingredients together lightly, leaving some visible streaks of egg white.
- Line a 10x20 square baking tray, or a similar sized ovenproof dish, with baking sheets.
- Transfer the thick cake batter into the prepared tray and bake for 15 minutes.
