Authentic Vietnamese Dipping Sauce (Nuoc Cham)
This is a cherished family recipe for classic Vietnamese dipping sauce, passed down through generations. It balances sweet, sour and spicy flavours perfectly. The sauce is traditionally served with fresh spring rolls or salad rolls, and also works wonderfully as a dressing for rice noodle salads. It yields a generous quantity that stores very well in the refrigerator for extended use.
Ingredients
- 2 heads garlic, minced
- 6 limes, juice of
- 1 1/4 cups white vinegar
- 1 1/2 cups fish sauce
- 2 1/2 cups white sugar
- 1 tablespoon chili-garlic sauce
- 4 cups cold water
Method
- Place the minced garlic, lime juice and white vinegar into a large mixing bowl. Let these three components rest together for at least 10 minutes.
- Pour in the cold water, fish sauce, white sugar and chili-garlic sauce.
- Stir everything thoroughly until fully combined. You can tweak the flavour by adding a little more sugar or water if needed.
- The sauce is ready to use straight away, but its flavour improves significantly after being chilled overnight. It becomes even more delicious after a week in the fridge.
