Winter Fruit Compote
This warming winter compote is prepared in two simple stages. Dried fruit is simmered with orange juice and whole spices in the microwave until sticky and plump. After a brief rest, it's served with a dollop of Greek yogurt or fromage frais. It's a speedy, fruity dish that contributes to your daily fruit intake.
Ingredients
- 500g pack mixed dried fruit
- 200ml fresh orange juice
- half cinnamon stick
- 6 cloves
- 6 black peppercorns
- 0% Greek yogurt or low-fat fromage frais, to serve
Method
- Combine the dried fruit, orange juice, cinnamon stick, cloves and peppercorns in a bowl suitable for the microwave. Heat on High for 4-5 mins, pausing to stir once, until the liquid is sticky and the fruit has softened.
- Allow the mixture to rest for a minute. Spoon into bowls and top with yogurt or fromage frais to serve.
