10-Minute Vegan Brownies
These vegan brownies are wonderfully simple and fast to prepare, ideal for a sudden chocolate craving. Ingredients
- 1/4 cup canola oil
- 1 cup semi-sweet chocolate chips (vegan)
- 1/2 cup unsweetened applesauce, or
- 1/2 cup silken tofu
- 3/4 cup sugar
- 1 teaspoon pure vanilla extract
- 1 cup unbleached all-purpose flour
- 1 cup baking powder
Method
- Heat your oven to 350 degrees.
- Prepare a 6x9 baking pan by lightly oiling it and setting it aside.
- Place the oil and chocolate chips in a saucepan and warm over low heat, stirring gently until fully melted.
- Alternatively, melt the chocolate and oil in a microwave using two 30 second bursts, followed by a final 10 seconds, stirring well between each interval.
- In a different bowl, mix together the applesauce or silken tofu with the sugar and vanilla extract. Use a whisk or stand mixer to blend these wet ingredients thoroughly.
- Pour the melted chocolate mixture into the bowl with the applesauce or tofu blend.
- Gently fold the flour and baking powder into the chocolate batter until just combined, being careful not to overmix.
- Transfer the batter to the prepared pan, level the surface, and bake for 25 to 30 minutes.
- Allow the brownies to cool completely in the pan before cutting them into squares.
