Ingredients

  • 1/4 cup canola oil
  • 1 cup semi-sweet chocolate chips (vegan)
  • 1/2 cup unsweetened applesauce, or
  • 1/2 cup silken tofu
  • 3/4 cup sugar
  • 1 teaspoon pure vanilla extract
  • 1 cup unbleached all-purpose flour
  • 1 cup baking powder

Method

  1. Heat your oven to 350 degrees.
  2. Prepare a 6x9 baking pan by lightly oiling it and setting it aside.
  3. Place the oil and chocolate chips in a saucepan and warm over low heat, stirring gently until fully melted.
  4. Alternatively, melt the chocolate and oil in a microwave using two 30 second bursts, followed by a final 10 seconds, stirring well between each interval.
  5. In a different bowl, mix together the applesauce or silken tofu with the sugar and vanilla extract. Use a whisk or stand mixer to blend these wet ingredients thoroughly.
  6. Pour the melted chocolate mixture into the bowl with the applesauce or tofu blend.
  7. Gently fold the flour and baking powder into the chocolate batter until just combined, being careful not to overmix.
  8. Transfer the batter to the prepared pan, level the surface, and bake for 25 to 30 minutes.
  9. Allow the brownies to cool completely in the pan before cutting them into squares.
