10 Minute TVP Tacos (Modified Single Serve Version)
This is a modified, spicier version of a classic TVP taco recipe, scaled down for one or two people. It uses textured vegetable protein granules for a quick, meat-free filling, flavoured with a homemade taco spice blend, bouillon, and salsa. The mix is ready in minutes and is perfect for stuffing into warm tortillas with cheese and fresh tomato. It's an ideal speedy and satisfying one dish meal.
Ingredients
- 1/2 cup water
- 1/2 cup textured vegetable protein, the ground beef granules style
- 1 teaspoon beef bouillon concentrate
- 1 teaspoon nutritional yeast flakes (optional)
- 1 tablespoon diced onion
- 1 1/2 teaspoons taco seasoning (see instructions if you don't have any)
- 1/4-1/2 teaspoon cayenne (adjust to taste) (optional)
- 1 teaspoon olive oil
- 1/8 cup red pepper, cut into 1 inch strips
- 4 slices medium onions, quartered
- 2 tablespoons taco sauce or 2 tablespoons salsa
- 1/4 cup cheddar cheese
- 2 cherry tomatoes
- 2 tortillas
- 2 teaspoons chili powder
- 1 1/2 teaspoons cumin
- 1 1/2 teaspoons paprika
- 1 teaspoon cayenne (to taste)
Method
- If you lack pre-mixed taco seasoning, combine the listed seasoning ingredients. This makes enough for four batches, so measure out 1 1/2 tsp for this recipe and store the remainder.
- Place the water, diced onion, bouillon concentrate, TVP, the measured taco seasoning, and optional nutritional yeast into a one quart saucepan. Heat this while stirring constantly until most of the liquid has been taken up.
- Pour in the olive oil along with the sliced red peppers and onion quarters. Continue to stir and cook for a couple of minutes to slightly soften the onions.
- Stir the taco sauce or salsa into the pan to heat it through, then take the pan off the heat.
- This quantity of filling is sufficient for two ten inch flour tortillas.
- Prepare the cherry tomatoes by cutting them into strips or dicing them for garnish. Assemble the tacos by placing the filling on the tortillas, topping with cheese and tomato, then wrapping them up. Shredded lettuce can be added if available.
