This colourful and healthy Italian pasta dish comes together in a flash. Fresh spinach and ricotta tortellini are cooked and combined with blistered cherry tomatoes in a frying pan. Finished with chopped parsley and finely grated parmesan, it creates a simple yet flavourful main course perfect for a speedy lunch, dinner, or supper. The entire process takes only 10 minutes from start to finish.

10-Minute Tortellini

Ingredients

  • 250g pack fresh spinach and ricotta tortellini
  • 1 tbsp olive oil
  • 250g pack cherry tomato
  • 2 x packs parsley leaves roughly chopped
  • 3 tbsp finely grated parmesan

Method

  1. Cook the tortellini in boiling water for 2 mins until just tender. While the pasta cooks, warm the olive oil in a frying pan and cook the cherry tomatoes until their skins begin to blister.
  2. Drain the cooked pasta, saving a little of the pasta water. Return the tomatoes to the heat. Add the drained tortellini, chopped parsley, a splash of the reserved water, and the majority of the parmesan. Let the mixture bubble together, then season with black pepper and salt if desired. Serve topped with the remaining parmesan.
