10-Minute Tasty Chicken Teriyaki
This speedy Japanese dish delivers flavour in minimal time. Chicken pieces are coated in a honey teriyaki sauce and briefly microwaved before being stir-fried with fresh ginger and garlic. The dish is finished by wilting mixed greens directly in the hot pan. It's a convenient and tasty option for a fast lunch or snack, serving four people.
Ingredients
- 1 1/2 lbs raw chicken breasts (whole or 'tenders')
- kc masterpiece honey teriyaki sauce
- mixed greens (the kind you can get pre-washed in a bag)
- 5 teaspoons cooking oil (vegetable or olive)
- 3 teaspoons sliced fresh ginger (easily the 'magic' ingredient!)
- 1 teaspoon minced garlic
Method
- Press the raw chicken pieces with your hands to remove much of the excess moisture.
- Slice the chicken into bite-sized chunks and arrange them on a plate suitable for the microwave. Liberally brush the chicken with the teriyaki sauce, ensuring it is well coated but not swimming.
- Cover the plate and microwave the chicken for 2.5 minutes, taking care not to cook it through entirely. Once done, set it aside.
- Place a large saucepan on the hob and turn the heat to high.
- Put the sliced ginger into the hot saucepan and let it heat for 1 minute to dry it out.
- Pour the cooking oil into the pan with the ginger.
- Stir-fry the contents until the ginger begins to take on colour, then introduce the minced garlic.
- Continue to stir-fry until both the ginger and garlic are just starting to brown.
- Add the chicken pieces coated in teriyaki sauce to the saucepan.
- Stir-fry the mixture for 5 minutes, or until the liquid has mostly evaporated, leaving the oil behind.
- Switch off the heat and promptly add the bag of mixed greens to the pan.
- Give everything one final, rapid stir to wilt and lightly cook the greens, then serve immediately.
