10-Minute Stir-Fry
This speedy stir-fry is a perfect healthy side or light dinner. Sliced garlic and optional red chilli are fried before mixed vegetables like pak choi, baby corn and broccoli are added. Tossed with soy and sweet chilli sauce, it cooks until tender in a matter of minutes. It's an ideal accompaniment for grilled fish or chicken, delivering vibrant flavour and crisp texture with minimal effort.
Ingredients
- 1 tbsp vegetable oil
- 1 red chilli sliced (optional)
- 1 garlic clove sliced
- 500g mixed vegetables such as pak choi, baby corn and broccoli
- 11/2 tbsp soy sauce
- 2 tbsp sweet chilli sauce
Method
- Warm the vegetable oil in a large frying pan or wok, then cook the sliced chilli and garlic for 1 min.
- Introduce the mixed vegetables and toss them to coat in the oil. Fry for 2-3 mins, then pour in the soy and sweet chilli sauce, stirring to combine. Continue cooking for 2-3 mins more until the vegetables are tender.
