10 Minute Satay Beef Stir Fry
This quick satay beef stir fry is perfect for a fast weeknight meal. Thinly sliced rump steak is browned in a wok with onion, spring onions and Thai green curry paste. A creamy sauce is made by stirring in coconut milk, crunchy peanut butter and Vegemite, then finished with fresh coriander. Serve it all over steamed rice for a complete and satisfying dish in under 30 minutes.
Ingredients
- 2 teaspoons oil
- 1 medium onion, sliced
- 2 spring onions, cut into 3 cm lengths
- 2 teaspoons thai green curry paste
- 500 g rump steak, thinly sliced
- 1/2 cup coconut milk
- 2 tablespoons crunchy peanut butter
- 2 teaspoons vegemite
- 2 tablespoons chopped fresh coriander steamed rice, to serve
Method
- Warm the oil in a wok or frying pan, then cook the sliced onion, spring onion pieces and curry paste for 3 minutes until the onion softens.
- Introduce the sliced beef in batches, stir-frying each until it browns. Mix in the coconut milk, peanut butter and Vegemite, stirring until the sauce becomes smooth.
- Add the chopped coriander and stir it through, then serve the stir fry accompanied by steamed rice.
