10 Minute Quick Pickled Red Onions
These quick pickled red onions are a simple, flavourful garnish ready in about 10 minutes. Thinly sliced onions are marinated in a spiced vinegar brine, with an optional chile for heat. They develop good flavour quickly but improve with time, making them ideal for topping gorditas, enchiladas, or grilled dishes. Consider making a double batch to keep some in the fridge for later use.
Ingredients
- 1 large red onion, peeled
- 1/2 small red chili pepper (such as a ripe serrano,jalapeno,or you may use a habanero if you really like things spicy) (optional)
- 1/4 teaspoon sea salt
- 1/2 teaspoon sugar
- 1/4 teaspoon ground allspice
- 1/2 cup apple cider vinegar or 1/2 cup mild white vinegar
Method
- Slice the peeled red onion in half lengthwise, then cut it into very thin slices. If you are using the chile, remove the stem and slice it paper thin, discarding the seeds if you prefer.
- Combine the sea salt, sugar, and ground allspice with the vinegar, stirring until the sugar has fully dissolved. Pour this mixture over the sliced onions and chiles, mixing everything together well.
- Allow the onions to marinate for at least 10 minutes before serving. They can be used immediately but will develop a deeper flavour if left longer.
