10 Minute Pudding
This speedy dessert is assembled in individual ramekins for a fast, comforting treat. The base features chopped peaches, while a cinnamon and orange zest rice pudding mixture is layered on top. A sprinkle of sugar is caramelised under the grill to create a deliciously hot, crisp topping. Allow it to cool briefly before enjoying. The recipe suggests alternative fruits like mandarin, pineapple or fresh mango for variation.
Ingredients
- 410 g sliced peaches in juice, drained
- 1/4 teaspoon ground cinnamon
- 1/2 orange, rind of, finely grated
- 425 g rice pudding or 425 g custard
- 4 tablespoons caster sugar (for a more toffee flavour use demerara sugar)
Method
- Switch on your grill.
- Chop the peaches into rough pieces.
- Divide the chopped peaches between four ramekins or heatproof cups.
- Mix the ground cinnamon and finely grated orange rind into the rice pudding or custard.
- Spoon the rice pudding mixture over the peaches in the ramekins.
- Use the back of a spoon to smooth the tops, then sprinkle the caster or demerara sugar evenly over each one.
- Place under the grill for 5 minutes, until the sugar has melted and caramelised.
- Let the puddings cool a little before serving, as the caramelised sugar will be extremely hot.
- VARIATIONS:
- You may substitute the peaches with canned mandarin slices, pineapple rings, or fresh mango.
