Pork Lo Mein
This speedy pork lo mein is a complete one dish meal prepared in a single skillet or wok. Thin strips of pork tenderloin are stir fried with ramen noodles, red bell pepper, broccoli and green onions in a savoury sauce. It's a satisfying dish that comes together in just 19 minutes, perfect for a fast weeknight dinner. The recipe yields four generous servings.
Ingredients
- 1 tablespoon vegetable oil
- 3/4 lb pork tenderloin, cut into 1/8 inch strips
- 2 (3 ounce) packages pork-flavored ramen noodles
- 1 1/2 cups water
- 1 medium red bell pepper, sliced into thin strips
- 1 cup broccoli floret
- 4 medium green onions, cut into 1 inch pieces
- 1 tablespoon fresh parsley, chopped or 2 teaspoons dried parsley
- 1 tablespoon soy sauce
Method
- Place a skillet or wok over med-high heat, then pour in the oil and swirl it to coat the surface.
- Introduce the pork strips and stir fry them for 5 min until they are no longer pink.
- Break the noodles apart gently and put them into the skillet with the water, the seasoning packet and all the other ingredients.
- Bring the mixture to a boil and let it boil for 3-4 minutes, giving it an occasional stir, until the noodles have softened.
- Diet exchanges: 2 starch, 3 lean meat, 1/2 fat.
