10 Minute Peanut Butter Fudge
This quick American dessert combines peanut butter and crushed saltine crackers for a delightful salty-sweet flavour. The fudge mixture comes together in a saucepan before being pressed into a dish to set. A final drizzle of melted chocolate and a sprinkle of sea salt complete this simple, addictive treat that serves 12 people.
Ingredients
- 2 cups sugar
- 1/2 cup milk
- 3 tablespoons butter
- 30 Saltine crackers, finely crushed in a food processor or blender (see notes)
- 1 teaspoon vanilla
- 1 1/4 cup peanut butter
- 1 1/2 cups chocolate chips
- coarse sea salt
Method
- Finely crush the crackers to your preferred texture and place them in a large bowl with the peanut butter.
- Put the sugar, milk, and butter into a saucepan. Bring to a boil and let it bubble for 1 minute, then take it off the heat. Pour this hot mixture over the crackers and peanut butter, add the vanilla, and stir everything into a soft, uniform dough.
- Transfer the dough into a 9-inch baking dish, which can be lined with parchment. Let it cool for at least 1 hour until firm enough to slice. chilling in the refrigerator speeds this up.
- Melt the chocolate chips and drizzle the liquid chocolate over the fudge. Finish by scattering coarse sea salt on top.
