Orange Beef and Asparagus Stir-Fry
This vibrant stir-fry combines tender strips of flank steak with crisp asparagus and bell peppers in a glossy sauce made from orange juice, honey, and soy sauce. It's a flavourful one-dish meal that comes together in a flash, ideal for busy evenings. The optional addition of honey-roasted peanuts provides a delightful crunch. Ingredients
- 3/4 cup orange juice
- 3 tablespoons soy sauce
- 1/2 cup honey
- 1 tablespoon cornstarch
- 1 teaspoon chili oil or 1/2 teaspoon hot red pepper flakes
- 1 lb flank steak, cut across the grain into thin strips
- 2 tablespoons peanut oil or 2 tablespoons canola oil
- 2 cups asparagus, cut into 1 1/2-inch pieces
- 1 red bell pepper, cut into strips
- 1/2 cup sliced scallion
- 1 cup shredded carrot
- 2 teaspoons grated fresh ginger
- 1 teaspoon minced garlic

- 1/2 cup honey-roasted peanuts (optional)
Method
- Mix the orange juice, soy sauce, honey, cornstarch, and chili oil together in a bowl. Place the steak strips into this mixture and toss them to coat thoroughly.
- Pour 1 tablespoon of the peanut oil into a large skillet or wok and place it over high heat. Cook the asparagus pieces for 4 minutes. Next, add the bell pepper strips, sliced scallion, and shredded carrot, cooking for 1 minute more. Stir in the grated ginger and minced garlic, frying for a further 1 minute before transferring all the vegetables to a separate bowl.
- Warm the remaining tablespoon of peanut oil in the same pan. Cook the marinated steak strips for 3-4 minutes. Return the cooked vegetables to the skillet with the beef. Add the honey-roasted peanuts now if you are using them. Continue to stir fry everything until it is piping hot.
- Finish the dish by scattering sesame seeds over the top. It is best enjoyed served over a bed of rice or noodles.
