Orange Beef and Asparagus Stir-Fry

Ingredients

  • 3/4 cup orange juice
  • 3 tablespoons soy sauce
  • 1/2 cup honey
  • 1 tablespoon cornstarch
  • 1 teaspoon chili oil or 1/2 teaspoon hot red pepper flakes
  • 1 lb flank steak, cut across the grain into thin strips
  • 2 tablespoons peanut oil or 2 tablespoons canola oil
  • 2 cups asparagus, cut into 1 1/2-inch pieces
  • 1 red bell pepper, cut into strips
  • 1/2 cup sliced scallion
  • 1 cup shredded carrot
  • 2 teaspoons grated fresh ginger
  • 1 teaspoon minced garlic
  • sesame seeds
  • 1/2 cup honey-roasted peanuts (optional)

Method

  1. Mix the orange juice, soy sauce, honey, cornstarch, and chili oil together in a bowl. Place the steak strips into this mixture and toss them to coat thoroughly.
  2. Pour 1 tablespoon of the peanut oil into a large skillet or wok and place it over high heat. Cook the asparagus pieces for 4 minutes. Next, add the bell pepper strips, sliced scallion, and shredded carrot, cooking for 1 minute more. Stir in the grated ginger and minced garlic, frying for a further 1 minute before transferring all the vegetables to a separate bowl.
  3. Warm the remaining tablespoon of peanut oil in the same pan. Cook the marinated steak strips for 3-4 minutes. Return the cooked vegetables to the skillet with the beef. Add the honey-roasted peanuts now if you are using them. Continue to stir fry everything until it is piping hot.
  4. Finish the dish by scattering sesame seeds over the top. It is best enjoyed served over a bed of rice or noodles.
