This individual apple crisp is a wonderfully fast dessert. Spiced apple pieces are cooked until tender, then crowned with a golden, crunchy oat topping. The entire process happens in a microwave, requiring only a few basic ingredients and about 10 minutes from start to finish. It's an ideal treat when you want a cosy, homemade sweet without the wait.

Microwave Apple Crisp for One

Ingredients

  • 2 tablespoons all-purpose flour
  • 1 tablespoon brown sugar or granulated sugar
  • 1 tablespoon old-fashioned rolled oats
  • Pinch kosher salt
  • 1 tablespoon unsalted butter, cut into 4 pieces
  • 1 apple, peeled, cored, and cut into 3/4-inch pieces
  • 2 tablespoons brown sugar or granulated sugar
  • 1 teaspoon lemon juice, optional
  • 1/2 teaspoon all-purpose flour
  • 1/8 teaspoon ground cinnamon or apple pie spice blend

Method

  1. Prepare the crumble topping by combining the flour, sugar, oats and salt in a bowl suitable for the microwave. Use your fingertips to work the butter pieces into the dry ingredients until it resembles breadcrumbs. Heat in the microwave, pausing to stir every 30 seconds, until it turns golden and smells toasted, which will take 2 to 3 minutes. Move the topping to a plate to cool a little while you make the filling.
  2. For the apple filling, place the apple pieces, sugar, flour, optional lemon juice and cinnamon into the same bowl. Microwave the mixture, giving it a stir now and then, until the apple softens and the sauce thickens a bit, about 3 to 5 minutes.
  3. Scatter the prepared crumble topping over the hot apple filling and enjoy immediately.
