Ingredients
- 2 (14 ounce) cans sweetened condensed milk
- 1 pint heavy cream
- 3/4 cup lime juice, plus
- 1 tablespoon lime zest, from 8 limes
- 70 Ritz crackers (about 35 crackers per sleeve)
Method
- Place the sweetened condensed milk and heavy cream into a large mixing bowl.
- Pour in the lime juice and whisk the mixture for about 1 minute until it thickens.
- Spoon roughly 1 cup of the prepared filling to cover the base of a deep-dish pie plate.
- Arrange a single layer of Ritz crackers over the filling.
- Continue building layers, alternating between the lime filling and crackers until the plate is full. End with a layer of filling, stirring half of the lime zest into this final portion.
