10-Minute Lime Cracker Pie
This American dessert requires just four ingredients and ten minutes of active preparation. It layers a creamy, tangy lime filling with buttery Ritz crackers for a no-bake pie reminiscent of sweet potato pie. After assembling, it needs to chill in the refrigerator for at least 2 hours to set properly before serving, making it an ideal make-ahead treat for gatherings.
Ingredients
- 2 (14-ounce) cans sweetened condensed milk
- 1 pint heavy cream
- 1/2 cup lime juice plus 1 tablespoon zest from 8 limes
- 10 ounces (about 2 1/2 sleeves) Ritz crackers
Method
- In a large bowl, mix the sweetened condensed milk with the heavy cream.
- Pour in the lime juice and whisk the mixture for about 1 minute until it thickens.
- Spread roughly 1 cup of the prepared filling across the base of a deep-dish pie plate, an 11-inch oval casserole, or two shallow pie dishes.
- Arrange a single layer of Ritz crackers over the filling.
- Continue building layers, alternating between the lime filling and crackers until the dish is full, ending with a final layer of the creamy mixture.
- Finish by sprinkling the grated lime zest over the top.
- Place the pie in the refrigerator to chill for at least 2 hours, or leave it overnight.
- Slice and serve the chilled pie.
