10 Minute French Bread
This recipe guides you through making classic French bread with a remarkably short preparation time. You will combine bread flour, fast rise yeast, sugar, salt, olive oil, and hot water to create a smooth, elastic dough. After kneading, the dough is shaped into loaves or sub rolls and baked until golden. The method includes a tip for achieving a crunchy crust by introducing steam into the oven. The entire process from mixing to serving takes about 40 minutes.
Ingredients
- 5 cups bread flour
- 2 tablespoons fast rise yeast
- 2 tablespoons sugar
- 3 teaspoons kosher salt (less if you use regular salt)
- 1 tablespoon olive oil
- 2 cups hot water (not more than 115 degrees)
Method
- Combine the hot water, fast rise yeast, and sugar in a bowl.
- Stir in the kosher salt, four cups of bread flour, and the olive oil.
- Incorporate a bit more flour should the dough remain too soft to handle.
- Transfer the dough onto a surface with the remaining one cup of flour. Knead it for 5 to 10 minutes until it feels smooth and elastic, adding extra flour as necessary.
- Use a knife to separate the dough into two to four portions. Shape each piece into a round loaf, placing the sticky side onto a light dusting of flour.
- For a sub roll, flatten a portion with a rolling pin into an oblong shape, then roll it up tightly. Spritz with water for a crispier finish, or place a mug of water in the oven.
- Arrange the shaped loaves on a cookie sheet that has been lightly dusted with flour.
- Bake in an oven preheated to 375 for 30 minutes.
