10 Minute Creamy Salmon Pasta Sauce With Broccoli
This is a wonderfully quick Italian pasta sauce that comes together in the time it takes to cook your pasta. Featuring flaked salmon and tender broccoli in a rich, creamy base made with a simple roux and cream of chicken soup, it's a family favourite. The versatile sauce also works well spooned over rice or baked potatoes. The entire dish is ready in just 11 minutes.
Ingredients
- 1 tablespoon butter
- 1 onion, chopped fine
- 1 teaspoon garlic
- 1 tablespoon flour
- 425 g salmon (liquid, skin and bones removed)
- 1 (425 g) can cream of chicken soup
- 2 cups finely chopped pre cooked broccoli
- 1/2 cup cream
- pepper
Method
- Cook the broccoli for 2-3 minutes in roughly 1/4 cup of water, using a microwave if preferred.
- In a large skillet, melt the butter and fry the chopped onion until it turns translucent, which should take about 2 minutes. Stir in the garlic and cook for 30 - 60 seconds until fragrant. Mix in the flour and cook for 1 minute, stirring constantly.
- Pour in the can of soup, then add the cooked broccoli along with its cooking liquid and the salmon. Stir everything to break up the fish and cook for 3-4 minutes.
- Add the cream and stir well. Heat gently for 1 - 2 minutes, being careful not to let it boil. Season with pepper and mix through.
- Combine the finished sauce with your cooked pasta and serve immediately.
