This speedy Mediterranean salad is an ideal lunchbox option for a day out or a refreshing meal straight from the fridge. It combines fluffy couscous with crisp red pepper, cucumber, and spring onions, all tossed with pesto and topped with crumbled feta and pine nuts. The entire dish comes together in the time it takes for the couscous to soak, making it a wonderfully convenient and flavourful choice.

10-Minute Couscous Salad

Ingredients

  • 100g couscous
  • 200ml hot low salt vegetable stock (from a cube is fine)
  • 2 spring onions
  • 1 red pepper
  • 1/2 cucumber
  • 50g feta cheese cubed
  • 2tbsp pesto
  • 2tbsp pine nuts

Method

  1. 1. Place the couscous into a large bowl and pour the hot stock over it. Cover the bowl and allow it to stand for 10 mins until the grains are fluffy and have absorbed all the liquid. 2. While the couscous rests, prepare the vegetables by slicing the spring onions and red pepper, and dicing the cucumber. 3. Add the prepared vegetables to the couscous, mix the pesto through with a fork, crumble in the feta cheese, and finish by scattering the pine nuts over the top to serve.
