10 Minute Chocolate Self-Saucing Pudding

Ingredients

  • 2 tablespoons butter, melted
  • 1 cup self-raising flour
  • 3/4 cup sugar
  • 2 tablespoons cocoa
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1 teaspoon vanilla essence
  • 1/2 cup brown sugar
  • 1 tablespoon cocoa
  • 2 tablespoons desiccated coconut
  • 1 1/2 cups boiling water
  • 1 piece of baking paper

Method

  1. Mix the self-raising flour with 2 tablespoons of cocoa, the salt and 3/4 cup of sugar in a bowl. Add the milk, melted butter and vanilla essence and stir to combine.
  2. Transfer the batter into a microwave-safe ring mould or casserole dish. In a separate bowl, mix the brown sugar, 1 tablespoon of cocoa and the desiccated coconut, then scatter this evenly over the batter.
  3. Carefully pour the 1 1/2 cups of boiling water over the top of the mixture. Place a sheet of baking paper over the dish to cover it.
  4. Microwave the pudding on HIGH for 6 minutes.
  5. Allow the pudding to cool for 4-5 minutes after cooking.
  6. Serve the warm pudding, optionally with whipped cream or vanilla ice cream.
