10 Minute Chocolate Self-Saucing Pudding
This speedy dessert is perfect for a sudden chocolate craving. A simple batter of self-raising flour, cocoa, sugar and milk is topped with a coconut and brown sugar mix, then hot water is poured over. It cooks in the microwave in just 6 minutes, creating its own delicious sauce. Let it stand briefly before serving warm, perhaps with a dollop of cream or ice cream. Ingredients
- 2 tablespoons butter, melted
- 1 cup self-raising flour
- 3/4 cup sugar
- 2 tablespoons cocoa
- 1/2 teaspoon salt
- 1/2 cup milk
- 1 teaspoon vanilla essence
- 1/2 cup brown sugar
- 1 tablespoon cocoa
- 2 tablespoons desiccated coconut
- 1 1/2 cups boiling water
- 1 piece of baking paper
Method
- Mix the self-raising flour with 2 tablespoons of cocoa, the salt and 3/4 cup of sugar in a bowl. Add the milk, melted butter and vanilla essence and stir to combine.
- Transfer the batter into a microwave-safe ring mould or casserole dish. In a separate bowl, mix the brown sugar, 1 tablespoon of cocoa and the desiccated coconut, then scatter this evenly over the batter.
- Carefully pour the 1 1/2 cups of boiling water over the top of the mixture. Place a sheet of baking paper over the dish to cover it.
- Microwave the pudding on HIGH for 6 minutes.
- Allow the pudding to cool for 4-5 minutes after cooking.
- Serve the warm pudding, optionally with whipped cream or vanilla ice cream.
