10 Calorie Chocolate Miracle Noodle Cookies

Ingredients

  • 1 (8 ounce) bag shirataki noodles (zero calories)
  • 2 medium egg whites (35 calories)
  • 3 tablespoons Dutch-processed cocoa powder (30 calories)
  • 1/2 teaspoon baking powder
  • 2 teaspoons honey (stevia or splenda for baking, raw honey-45 calories, stevia version-zero!)
  • 1 dash salt

Method

  1. This recipe makes one dozen teaspoon sized cookies, each containing roughly 10 calories.
  2. Preheat your oven to 375 for 10 minutes.
  3. Begin by opening the packet of shirataki noodles, also known as miracle noodles, and give them a thorough rinse under hot water.
  4. Rinse the noodles in a strainer with hot water. They have a distinct odour, so you may wish to sprinkle them with a little lemon juice, let them sit briefly, and then rinse once more. Ensure they drain completely, as excess moisture is not wanted.
  5. Place a large frying pan on the cooker. No grease is required. Add the drained noodles and cook them, stirring frequently.
  6. Continue stirring as the noodles dry out. they will begin to make a squeaking sound. Cook until they lose some translucency and appear slightly shrivelled, then remove from the heat. Overcooking may reduce yield slightly, while undercooking can make the dough runny.
  7. Allow the noodles to cool for a few minutes, then transfer them to a small food processor. Process the contents until they achieve a gel like consistency.
  8. Add the honey, cocoa powder, baking powder, and salt to the processor. Blend quickly until everything is combined. If the mixture seems too runny, place it in the refrigerator for an hour to firm up.
  9. After chilling, the mixture will be ready for shaping.
  10. Line a cookie sheet with foil and lightly coat it with a non stick cooking spray for easy cleanup.
  11. Bake the cookies at 375. An initial test for 5 minutes may leave the tops sticky, so bake for a full 10 minutes until set.
  12. The finished cookies have a dark chocolate flavour similar to a flourless torte. They are not very sweet, but you can add a sugar substitute if desired. They remain wonderfully moist for hours after baking.
  13. These are truly a unique and successful low calorie creation.
