Ingredients

  • 2 tablespoons unsalted butter, softened to room temperature
  • 2 tablespoons granulated sugar
  • 2 tablespoons light brown sugar or 2 tablespoons dark brown sugar
  • 2 tablespoons beaten eggs (crack an egg, beat it, and use 2 Tablespoons)
  • 1/2 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup dark chocolate chips, plus
  • 1 tablespoon dark chocolate chips
  • candy sprinkles (optional)

Method

  1. Set your oven to heat to 350F. Prepare a cookie sheet by lining it with parchment paper or a silicone mat.
  2. Using a spoon or fork, cream together the softened butter and both sugars in a medium bowl. Then stir in the beaten egg and vanilla extract.
  3. In another small bowl, combine the flour, cocoa powder, baking soda, and salt. Add these dry ingredients to the butter mixture and mix until incorporated. Gently fold in 1/4 cup of the dark chocolate chips.
  4. Transfer the dough to the centre of your prepared sheet. Use a spoon to shape it into a tall mound. Press the remaining 1 tablespoon of chocolate chips onto the top. Add sprinkles now if you like. Bake for 14-15 minutes, or up to 16 minutes. The cookie will be very soft when hot but will set as it cools. Let it cool fully on the baking sheet.
